Shrimp Dip

SHRIMP DIP

7 1/2 cups water

2 1/2 pounds unpeeled, medium-size fresh shrimp

1/2 green bell pepper, quartered

1 clove garlic

1 (8-ounce) package cream cheese, softened

1 (3-ounce) package creaam cheese, softened

3 tablesponns mayonnaise

2 tablespoons lemon juice

1/2 teaspoon salt

1 teaspoon hot sauce

Garnish: cooked, peeled shrimp

*Bring 7 1/2 cups water to a boil; add shrimp, and cook 3 to 5 minutes or just until shrimp turn pink. Drain and rinse with cold water; peel shrimp, and devein.

*Pulse shrimp in food processor 4 to 5 times or until chopped. Transfer to a large bowl.

*Pulse bell pepper, onion, and garlic in processor until chopped; add to shrimp.

*Process cream cheese and next 4 ingredients in processor until fluffy. Stir into shrimp mixture. Chill, if desired. Garnish, if desired. Yield: 6 cups.
